The bakehouse

Piped, layered and finished by hand.

Choux stacked into croquembouche. Pastry crumbed onto Napoleon tort. Chocolate collars cut and set one at a time. It's slow work that only ever shows up in the glass — which is why we photograph nearly everything before it sells.

Choux, layered pastry, mousse and cheesecake, finished by hand on site. What's in changes with the day.
